Tomato pickle is a traditional pickle from Andhra Pradesh. In this preparation the tomatoes are well cooked on a medium flame. It is then grinded and cooked along with other spices which makes this pickle spicy and tangy. It tastes best when served with steamed rice, upma, parathas or with curd rice.
Preparation time – 10 min
Cooking time – 40 min
Serves – 4 to 6
Ingredients:
Tomatoes – 1 kg chopped
Red chili powder – 2 tbsp
Salt – as required
Tamarind juice – 4 tsp
Oil – 3 tbsp
Tempering ingredients:
Mustard seeds – 1/4 tsp
Red chilies – 3
Asafoetida/hing – 1/8 tsp
Curry leaves – few
Garlic – 6 finely chopped
Oil – 4 tsp
Ingredients required for dry roasting and grinding:
Mustard seeds – 1 tsp
Methi seeds – 1 tsp
Method:
1. Wash the tomatoes well and dry it on a paper towel. Chop it into small pieces and set aside.
2. In a pan dry roast the mustard seeds and methi seeds separately. Grind it to a fine powder once it cool down and set aside the ground powder.
3. In a pan add in 3 tbsp of oil and allow it to heat up. Now add in the tomatoes and cook it on a medium flame till all the water from the tomatoes evaporates. It might take 30 to 35 min. Once it is well cooked allow it to cool down and grind it.
4. Heat 4 tsp of oil in a pan. Add in mustard seeds and let it splutter. Now add in red chilies, curry leaves, asafoetida and garlic. Saute well and add in the ground tomatoes.
5. Add required salt and red chili powder and mix. Cook well on a medium flame. Add 4 tsp of tamarind juice and mix. Cook well till the oil separates from the tomato mixture. Adjust the salt and spice levels as per your taste and switch off the stove.
6. Let the tomato mixture cool down well. Now add in a tsp of mustard powder and methi powder and mix well. Store it in a air tight container.
