Gobi paratha/Cauliflower paratha

Gobi Paratha is a popular Indian paratha recipe which is stuffed with flavored cauliflower stuffing. It is a simple and healthy recipe which is quick and easy to prepare and it is ideal for breakfast, lunches or for dinner. It is so delicious and it goes well with simple raita, yogurt or pickle.

Serves – 4

Ingredients:

For making the dough:

Whole wheat flour – 1 cup
Oil – 1 tsp
Water – 1/3 cup or as required for making the dough
Salt – as required

For making the stuffing:

Gobi/cauliflower – 1 cup grated
Cumin seeds/Jeera – 1/2 tsp
Onion – 1 small sized finely chopped
Turmeric powder – 1/4 tsp
Salt – as required
Chili powder – 1/2 tsp or as per your taste
Coriander leaves/Cilantro – few finely chopped
Oil – 2 tsp

Method:

1. Take 1 cup of flour, add salt and a tsp of oil. Mix well till the oil is well incorporated in the flour. Then add 1/3 cup of  water little by little and mix the flour. Knead the dough well until all the dry flour is absorbed and forms into a nice dough. Cover the dough and let it rest for at least 20 minutes.

2. In a pan add in 2 tsp and allow it to heat up. Now add in cumin seeds and saute. Add in onions and cook them till they are translucent.

3. Add in turmeric powder, salt and chili powder and mix well. Add in the grated cauliflower/gobi and mix well. Cook well till the cauliflower/gobi is nice and soft. Finally add in coriander leaves/cilantro and mix well. Set aside the stuffing.

4. Divide the dough into small equal sized balls. Take one ball and roll it into a small circle. Now place a tbsp of cauliflower/gobi stuffing and seal all the edges tightly.

5. Sprinkle little flour and gently roll it into a medium sized paratha. The parathas should not be too thin.

6. Place the rolled paratha on a hot tawa. Cook well on one side by applying little oil. When bubbles appear flip it to the other side and cook well by applying some oil. Cook well on both the sides.

Serve it hot with raita or pickle on the side.
