Brinjal Chutney – Coimbatore Style

Brinjal/eggplant chutney which is also called as Kathirikkai Bajji is a traditional recipe in Coimbatore. This chutney is very simple to prepare with minimum ingredients. It taste delicious with Idli or Dosa.

Preparation time – 10 min
Cooking time – 15 min
Serves – 4

Ingredients:

Brinjal/eggplant – 1 medium sized cut into small cubes
Potato – 1 small sized cut into small cubes
Tomatoes – 2 medium sized chopped
Green chilies – 3 or 4, depending on your taste
Curry leaves – few
Onion – 1 small sized chopped
Turmeric powder – 1/4 tsp
Salt – as per your taste
Mustard seeds – 1/4 tsp
Urad dal – 1/4 tsp
Coriander leaves/cilantro – 1 tbsp finely chopped
Oil – 3 tsp

Method:

1. Heat up oil in a small pressure pan. Add in mustard seeds and when it splutters add the urad dal. Add onions, green chilies and curry leaves. Saute till the onions are soft.

2. Add in the tomatoes, brinjal, potato and the coriander leaves. Add in turmeric powder, salt and mix. Add some water and close the pressure pan. Let it whistle for 2 times and switch off the stove.

3. Let the pressure goes down completely. Remove the lid of the pan and mash the chutney well with a masher.

Serve the delicious Brinjal Chutney/Kathirikkai Bajji with Idli or Dosa.
