Bottle guard peel Chutney is a delicious and tasty chutney preparation. It is quick to make and it goes well with hot steamed rice, bread or with roti.

Serves – 4 to 6
Ingredients:
Peel of bottle guard – 1 cup
Urad dal – 1 1/2 tsp
Coriander seeds/ Whole Dhania – 1 1/2 tsp
Red chilies – 2
Green chilies – 2
Garlic – 3
Turmeric powder – 1/8 tsp
Coriander leaves – few
Salt – as per your taste
Jaggery – 1/4 tsp
Tamarind – 1/4 tsp
Oil – 4 tsp
Tempering:
Mustard seeds – 1/4 tsp
Urad dal – 1/4 tsp
Asafoetida – a pinch
Method:
1.In a pan heat up a tsp of oil. Add in the urad dal and saute for a minute. Now add in the coriander seeds and the red chilies and saute for a minute. Transfer the sauteed ingredients to a plate and allow it to cool down.


2. In the same pan add in a tsp of oil and allow it to heat up. Now add in the peel of bottle guard, garlic and the green chilies. Saute the above ingredients for 3-5 minutes. Add in the turmeric powder and the coriander leaves and mix well. Transfer it to a plate and allow it to cool down.



3. In a mixie add in the ingredients sauteed in the first step and grind it to a coarse powder. Now add the rest of the sauteed ingredients from the step 2 with some jaggery, tamarind and salt and grind it to a coarse paste as shown below.



4. Add a tsp of oil in a pan and allow it to heat up. Add in the mustard seeds and allow it to splutter. Add in 1/4 tsp of urad dal and the asafoetida and saute for a minute. Transfer the sauteed ingredients to the chutney and mix well.


5. The quick and tasty Bottle guard Peel Chutney is all ready to enjoy !!!
