Chegodilu

Chegodilu which is also called as ring murukku is a deep fried snack from Andhra Pradesh. It is prepared using rice flour, moong dal and few other ingredients. It can be prepared for any kind of festival or as a perfect tea time snack. It is nice and crunchy on the outside and soft inside. It tastes delicious when it is hot and it cannot be stored for later use. It’s a popular snack among kids.

Preparation time – 10 min
Cooking time – 25 min
Soaking time for moong dal – 1 hour
Yields – 25

Ingredients:

Rice flour – 1 cup
Moong dal – 2 tbsp , soaked for an hour
Cumin seeds/Jeera – 1 tsp
Asafoetida/hing – 1/8 tsp
Water – 1 cup
Salt – as required
Turmeric powder – 1/4 tsp
Chili powder – 1/2 tsp or as required
Oil – 3 tsp
Oil – required for deep frying

Method:

1. Wash and soak the moong dal for an hour. Drain the water and set aside.

2. Heat water in a pan. Now add in the moong dal, turmeric powder, chili powder, salt, asafoetida/hing and cumin seeds. Add in 3 tsp of oil and mix well.

3. When the water comes to a boil, add in the rice four and mix well. Switch off the stove and cover it and set aside for 15 to 20 min.

4. After 20 min, knead the dough well until smooth. Grease your hands with little oil and divide the dough into small gooseberry size balls. Gently roll each ball into a thick rope. Bring the two ends together and seal it well to form a ring. Repeat the same for the rest of the dough.

5. Heat oil for deep frying. Gently drop each ring into the hot oil and fry it on a medium flame. When it raises to the top flip it to the other side and fry it until nice and golden on both the sides. Drain them on a paper towel to remove any excess oil.

Tips:

1. While making the rings/chegodilu, the remaining dough should be kept covered all the time to prevent it from drying.

2. To check whether the oil is hot, drop a small piece of the dough in the oil. If it raises to the surface immediately then the oil is ready for frying.
