Soya Chunks Curry

Soya Chunks which is also called as meal maker is widely used in Indian cooking to prepare many different recipes. Soya chunks curry is a quick and easy preparation. Soya chunks are a good source of protein and is a great alternative for meat. These soya chunks are cooked in a spicy gravy along with other spices which make this dish flavorful. It goes well with roti or steamed rice.

Preparation time – 15 min
Cooking time – 25 min
Serves – 4 to 6

Ingredients:

Soya chunks – 1 cup
Onion – 1/2 medium onion sliced lengthwise
Turmeric powder – 1/4 tsp
Salt – as required
Fennel seeds – 1/2 tsp
Bay leaf – 1
Cloves – 3
Cinnamon – 1/2 inch
Curry leaves – few chopped
Coriander leaves/Cilantro – few finely chopped
Oil – 1 tbsp

Ingredients required for roasting and grinding:

Coriander seeds – 1 tbsp
Cumin seeds/Jeera – 1 tsp
Oil – 1 tsp
Onion – 1 medium sized chopped
Ginger – 1/2 inch chopped
Garlic – 4 or 5 chopped
Tomato – 1 medium sized chopped
Grated coconut – 1/2 cup
Dry red chilies – 6 or as required

Method:

1. Soak soya chunks in hot water for 30 min. After 30 min, squeeze the water from soya chunks and set it aside.

2. In a pan add in coriander seeds, cumin seeds and a tsp of oil. Saute well till nice aroma comes. Now add in the chopped garlic, ginger and onions. Saute well till onions turns translucent.

3. Add in the dry red chilies, tomatoes and saute. Add the grated coconut and switch off the stove. Allow it to cool down and grind it to a smooth paste and set aside.

4. Heat up one tbsp of oil in a pan. Saute fennel seeds, bay leaf, cloves and cinnamon. Add in the sliced onion and cook till they turn translucent.

5. Add in the ground paste and mix well. Add turmeric powder and mix. Add required salt and some water and allow the gravy to boil.

6. Add in the soya chunks and some water if required. Add the chopped curry leaves and let it boil for 10 min.

7. Finally, add in the chopped coriander leaves and mix.

Soya Chunks Curry is all ready to be served. It taste great with roti or steamed rice.
