Carrot Kheer

Carrot Kheer is an easy dessert recipe which can be prepared for any occasion. In this the carrots are finely shredded and cooked along with milk and sugar. It is nice and creamy and taste delicious when served chilled. Both kids and adults will cherish this Carrot Kheer.

Preparation time – 10 min
Cooking time – 25 min
Serves – 4

Ingredients:

Carrots – 1 cup finely grated
Milk – 2 cups
Sugar – 1/4 cup
Cardamon powder – 1/4 tsp
Almonds – 5 pieces cut lengthwise
Raisins – 10
Ghee/clarified butter – 1 tbsp

Method:

1. Heat 1 tbsp of ghee in a pan. Now add in the sliced almonds and raisins and saute for 30 sec.

2. Add the finely grated carrots and cook on a medium flame for 10 min. Now add the milk and allow it to boil on a low to medium flame for 15 to 20 min.

3. Add in the cardamon powder, sugar and mix. Let it boil for another 5 min till the sugar is well melted. Adjust the sweetness and the consistency according to your taste.

Delicious Carrot Kheer is all ready to enjoy.
