Gutti Vankaya Kura

Gutti Vankaya kura which is also called as Stuffed brinjal/Eggplant curry is a popular dish from the cuisine of Andhra Pradesh. This is prepared using small brinjals which is stuffed and cooked along with other spices. This is so flavorful and it goes well with steamed rice along with plain boiled dal.

Preparation time – 15 min
Cooking time – 25 min
Serves – 6

Ingredients:

Brinjal/eggplant – 20 small sized
Onions – 1 medium sized sliced lengthwise
Tamarind – 1 tsp
Garlic – 5 cloves
Ginger – 1/2 inch
Turmeric powder – 1/4 tsp
Chili powder – 1 tsp
Salt – as per your taste
Cilantro/coriander leaves – few finely chopped for garnish
Oil – 3 tbsp

Ingredients required for dry roasting:

Coriander seeds/Whole Dhaniya – 2 tbsp
Black/white sesame seeds – 2 tbsp
Cumin seeds/Jeera – 1 tbsp
Coconut – 1/2 cup

Method:

1. In a pan first dry roast the coriander seeds and cumin seeds on a medium flame till nice aroma comes. Once it is nicely roasted transfer to a plate and allow it to cool down.

In the same pan dry roast the black/white sesame seeds till it is nice and golden in color. Transfer that to a plate and allow it to cool down.

2. Now dry roast the pieces of the coconut till it is golden in color and allow it to cool down. Now add 1 tsp of oil and saute the sliced onions till it gets golden in color.

Wash and slit the brinjals /eggplant and put it in the water to avoid change in the color of the brinjal/eggplant.

3. In a mixie/blender add the dry raosted coconut and grind it. Now add in the dry roasted coriander seeds, Cumin/Jeera, Black/white sesame seeds and grind well. Now add the sauteed onions, ginger, garlic, turmeric powder, chili powder, tamarind and salt and grind well by adding little water. The mixture should not be watery.

4. Now stuff the brinjals/eggplant with little bit of the mixture as shown in the picture. In a pan add 3 tbsp of oil and allow it to heat up. When the oil is hot add the stuffed brinjal/eggplant and cook it on a medium flame covered for 5 minutes or till the brinjal/eggplant is nice and tender.

Keep stirring gently in between to avoid sticking at the bottom.

5. When the brinjal/eggplant is well cooked add in the rest of the ground mixture along with some water. Allow it to boil for 10 minutes on a medium flame. Keep stirring gently. Adjust the salt and the consistency according to your taste. Now add the finely chopped cilantro/coriander leaves and mix well.
