Pav Bhaji is the most popular fast food in Mumbai, India. It is a curry prepared using mixed vegetables along with spices and served with the buttered Pav (bread roll). It is quick and easy to make but delicious at the same time. It is a wonderful one pot meal and it is one of the kids favorite.

Serves – 4 to 6
Ingredients:
Carrots – 1/2 cup chopped roughly
Potatoes – 3/4 cup chopped roughly
Green peas – 1/2 cup
Cauliflower – 1/2 cup
Green beans – 1/2 cup
Onion – 1 medium sized chopped finely
Ginger & Garlic paste – 1 tsp
Tomato – 2 tomatoes pureed
Coriander powder – 1 tsp
Chili powder – 1/2 tsp
Turmeric powder – 1/4 tsp
Cumin seeds/Jeera – 1/2 tsp
Garam masala powder – 3/4 tsp
Salt – as per your taste
Kasoori methi / dry fenugreek leaves – 1 tsp crushed finely
Oil – 2 tbsp
Coriander leaves/Cilantro – few finely chopped for garnish
Lime juice – to taste
Method:
1. In a pressure pan add in all the vegetables (carrots, potatoes, green beans, green peas & cauliflower) along with some water and little bit of salt and pressure cook it for 2 whistles. Wait till the pressure goes down completely. Remove the lid and mash the vegetables nicely and set aside.

2. In a pan heat up 2 tbsp of oil. Once it is hot add in Cumin seeds/Jeera and saute just for 30 seconds. Now add in the onions and saute well till the onions are translucent. Add in the ginger & garlic paste and saute till the raw smell goes away. Now add in the puree of 2 tomatoes and cook well on a medium flame for 5 minutes.
Add in all the dry spices (turmeric powder, salt, chili powder & coriander powder) and saute well till the oil separates from the mixture. Add the finely crushed kasoori methi/dry fenugreek leaves and mix well.




3. Once the mixture is well cooked add the mashed vegetables along with some water and allow it to boil for 10 minutes on a medium flame. Add the garam masala powder and mix. Cook for another 5 minutes and switch off the stove. Adjust the salt and the consistency according to your taste.
Add the coriander leaves/cilantro and mix.




The delicious and flavorful Bhaji is all ready to be enjoyed with the Pav (bread roll).
Top it off with some finely chopped onions, cilantro and some lime juice.
