Badusha/ Balushahi

Badusha is a traditional Indian sweet recipe which is prepared using maida/all purpose flour. The dough is shaped into small sized balls, deep fried in hot oil and dipped into sugar syrup. The texture of this sweet is crispy on the outside and flaky inside. It is a very popular sweet mainly prepared during festive seasons and other special occasions.

Preparation time – 15 min

Cooking time – 30 min

Makes – 12 to 15 pieces

Ingredients:

Required for making the dough:

Maida/all purpose flour – 1 cup

Salt – a pinch

Baking powder – 1/2 tsp

Thick curd/yogurt – 1.5 tbsp

Warm melted ghee – 1/4 cup

Cold water – 1 to 2 tbsp

Required for sugar syrup:

Sugar – 1 cup

Water – 1/2 cup

Cardamon powder – 1 tsp

Saffron – 5 to 6 strands

Preparation:

Making the dough for the badushas:

  1. In a mixing bowl, add in 1 cup of maida/all purpose flour, pinch of salt, 1/2 tsp of baking powder and mix well.
  2. Now add 1/4 cup of warm melted ghee and mix well until it crumbles.
  3. Add 1.5 tbsp of thick curd and mix. Add in 2 tbsp of cold water little by little and make a soft dough. Do not knead the dough. Cover it and rest for 15 to 20 min.

How to make sugar syrup:

  1. In a deep vessel add in 1 cup of sugar along with 1/2 cup of water and mix. Once it starts to boil add in the cardamon powder and few strands of saffron. Allow it to boil well for 15 min.
  2. After 15 min of boiling, cover it and set aside. The sugar syrup has to be warm before adding in the badushas.

Frying the Badusha:

  1. After 15 min of resting, take small sized dough and make a small ball. Make a dent in the center as shown in the above video. Repeat the same for the rest of the dough.
  2. Keeping the flame on low to medium heat deep fry the badushas. After a minute or two the badushas will start to float.
  3. Gently stir and fry well on both the sides until golden in color. Remove the badushas and drain them on a paper towel to remove any excess oil.
  4. Now drop the fried badushas into the warm sugar syrup and coat them well on all sides. Let it soak in the sugar syrup for at least 5 to 10 min.
  5. Remove the delicious badushas from the sugar syrup and serve.
