Rava Idli

Rava Idli is a popular, quick and easy breakfast or a evening snack recipe from Karnataka. It is a variation from traditional idli recipe which is made from rice and urad dal but made with Rava/Semolina, yogurt and few other spices. The process of making rava idli is very simple since it doesn’t require any grinding or fermentation. Rava idli is usually served hot with chutney like coconut chutney or tomato chutney

Preparation time – 10 min

Cooking time – 20 min

Makes – 10 idlis

Ingredients:

Rava/Sooji – 1 cup

Curd/yogurt – 1/2 cup

Water – required for making the batter

Ginger – 1/2 tsp finely grated

Salt – as per taste

Green chilies – 2 finely chopped

Curry leaves – few finely chopped

Cilantro – few strings finely chopped

ENO fruit salt – 1 tbsp

Oil – 1 tbsp

Ghee/Clarified butter – 1 tsp

Mustard seeds – 1/4 tsp

Urad dal – 1/4 tsp

Chana dal – 1/4 tsp

Roasted cashews – 2 tsp

Preparation:

  1. Heat 1 tbsp of oil and 1 tsp of ghee in a pan. Add in mustard seeds and when it starts to splutter add in the urad dal and chana dal and saute.
  2. Now add in the finely grated ginger, green chilies, curry leaves and cilantro and saute well.
  3. Add in a cup of rava/sooji and keep roasting on a medium flame for 5 minutes. Now transfer the roasted rava in a bowl and allow it to cool down a little and then add in the roasted cashews.
  4. Now add in 1/2 cup of curd, salt as per taste and mix. Add water little by little and mix well. (the consistency of the batter should be like the idli batter, Check out the video for detail). After it is well mixed set aside the batter for 30 min.
  5. Heat the idli cooker with enough water so that it will be ready for steaming the Rava idlis. Grease the idli plates with little oil or ghee.
  6. Now add in 1 tbsp of ENO fruit salt to the batter and mix well. Pour the batter into the idly moulds and place it in the idli cooker and cover it.
  7. Let it steam on a medium flame for 10 to 12 minutes. (to check whether it is well cooked insert a knife in the center of the idli and it has to come out clear)
  8. Soft and delicious Rava idlis are ready to enjoy. Serve them hot with coconut chutney or tomato chutney.
