Paneer Paratha

Paneer paratha is a very delicious recipe and it is one of the many popular paratha varieties from India. It is basically a Indian flat bread which is stuffed with paneer/cottage cheese along with other spices. It is a quick and easy recipe which can be served for lunch or dinner along with any kind of pickle, curry, raita or yogurt on the side. It is a perfect lunch box recipe.

Ingredients:

Required for the dough:

Whole wheat flour – 1 cup
Salt – as required
Water – 1/3 cup or as required to mix the dough
Oil – 2 tsp

Required for the stuffing:

Crumbled paneer – 1 1/2 cups
Onions – 1/2 medium sized onion finely chopped
Ginger – 1 tsp finely minced
Green chilies – 2 finely minced
Cilantro/coriander leaves – few finely chopped
Cumin seeds – 1/2 tsp
Chili powder – 1/2 tsp or as required
Salt – as required
Turmeric powder – 1/2 tsp
Lime juice – 1 tsp

Method:

1. Take 1 cup of flour, add salt and 2 tsp of oil. Add 1/3 cup of  water little by little and mix. Mix well till everything is well combined. Knead the dough well until all the dry flour is absorbed and forms into a nice dough. Cover the dough and let it rest for at least 15 minutes.

2. In a bowl add in the crumbled paneer, onions, ginger, green chilies, cilantro, chili powder, salt, turmeric powder, cumin seeds and a tsp of lime juice. Mix well till everything is well combined and set aside the paneer mixture.

3. After 15 min of resting the dough divide it into small equal balls. Take one ball and roll it into a small circle. Now place a tbsp of the paneer stuffing and seal all the edges tightly.

4. Sprinkle little flour and gently roll it into a medium sized paratha. The parathas should not be too thin.

5. Place the rolled paratha on a hot tawa. Cook well on one side by applying little oil. When bubbles appear flip it to the other side and cook well by applying some oil. Cook well on both the sides.

Serve it hot with raita or pickle on the side.
