Ragi Idiyappam/String Hoppers

Idiyappam which are also called as String Hoppers or nool puttlu is a popular dish in Tamil Nadu, Kerala and Sri Lanka. Traditionally, the idiyappams are prepared from rice flour or with idli rice. Ragi idiyappam is a healthy and a filling breakfast recipe. Ragi which is also called as “finger millets” in English and “Kezhvaragu” in Tamil is used to prepare many recipes. Ragi idiyappam can be served with coconut chutney.

Preparation time – 10 min
Cooking time – 25 min
Serves – 4 to 6

Ingredients:

Ragi flour/Finger millets – 1 cup
Water – 2 cup approx
Salt – as required

Method:

1. In a pan dry roast the ragi flour on a medium flame until it turns aromatic. Keep sauteeing continuously on the medium flame to avoid burning of the flour. Remove it and set aside until it cools down a little.

2. Bring 2 cups of water to a nice boil along with required salt.

3. Add the boiling water to the roasted ragi flour little by little and mix well until it is well combined. It will form a smooth dough. Add some more water if required. Cover it and set aside for 15 min.

4. Now take a fine noodle mould and place it in the chakli/murukku maker. Grease the chakli/murukku maker with little oil.

5. Grease your hands with little oil. Take a small portion of the prepared ragi dough and place it in the chakli/murukku maker and close it tightly. Gently squeeze the dough on the greased idli plates.

6.Place the idli plates in a steamer and steam for 10 minutes on a medium flame.

Serve this healthy and delicious Ragi Idiyappam/String hoppers along with coconut chutney.
