Potato Fry

A potato fry or aloo fry is a quick and easy dish which can be prepared easily for lunch or dinner. It is spicy and crispy and it goes extremely well with rasam rice, sambar rice, curd rice, hot steamed rice or as a side dish for roti. It is simply prepared by slicing the potatoes into thin slices and fried with little oil along with other spices.

Preparation time – 10 min
Cooking time – 15 min
Serves – 2

Ingredients:

Potatoes – 3 medium sized
Turmeric powder – 1/8 tsp
Salt – as required
Chili powder – 1/2 tsp or as per taste
Asafoetida/hing – 1/8 tsp
Oil – 2 to 3 tbsp
Mustard seeds – 1/8 tsp

Method:

1. Peel the skin of the potatoes and slice them into thin slices. Soak the sliced potatoes in some water with 1/2 tsp of salt for 5 min. Drain the water and set aside.

2. Heat oil in a non-stick pan. Add in mustard seeds and when it splutters add in the sliced potatoes and mix.

3. Spread the potatoes well in the pan and allow it to cook on a medium flame for 5 min. Now add in turmeric powder, asafoetida/hing and salt. Mix well.

4. When the potatoes are almost cooked add in the chili powder and mix. Let it get cooked for 5 more minutes or till it turns nice and crispy.

Finally, serve it with hot steamed rice along with sambar or rasam.
