Drumstick & Carrot Sambar

Sambar is the most popular dish in the South Indian cuisine. There are many varieties of Sambar but Drumstick sambar is very flavorful. It is usually served with hot steamed rice , Idli, Dosa , Pongal & urad dal vada

Serves – 6

Ingredients:

Toor dal – 1 cup
Onion – 1 medium sized chopped finely
Tomatoes – 2 medium sized chopped
Green chilies – 2
Drumstick – 2 cut into 1 inch pieces
Carrot – 2 cut into cubes
Tamarind – one gooseberry sized
Coriander leaves/cilantro – few finely chopped for garnish
Oil – required for pan frying
Salt – as per your taste
Turmeric powder – 1/4 tsp
Chili powder – 1/2 tsp or as per your taste
Sambar powder – 1/2 tsp or as per your taste

For tempering:

Mustard seeds – 1/2 tsp
Red Chilies – 2
Curry leaves – few chopped
Asafoetida/hing – 1/8 tsp

Method:

1. Wash the toor dal couple of times and soak it for 30 minutes. Drain the water and add the dal to the pressure pan along with 2 cups of water and let it whistle for 2 times. Wait for the pressure to go down completely and set aside the boiled dal. Soak the tamarind in some warm water for 10 min and extract the juice and set aside.

2. In a pan add in 4 tsp of oil and allow it to heat up. Now add in the chopped onions, green chilies and saute well till the onions are nice and soft. Add in chopped tomatoes, drumsticks and the carrots and saute well. Add salt and the turmeric powder and mix. Add some water and let the vegetables cook on a medium heat for 10 to 15 minutes.

3. When the vegetables are well cooked add in the tamarind juice and let it boil for 5 min. Add the chili powder and sambar powder. Add the boiled toor dal and allow it to boil well for 10 min on a medium heat. Adjust the salt and the consistency as per your taste.

4. In a small pan add in 2 tsp of oil. When the oil is hot add the mustard seeds and let it splutter. Now add the red chilies, curry leaves and asafoetida/hing and saute for 30 sec. Transfer the tempering ingredients to the sambar and mix well. Add the finely chopped coriander leaves/cilantro and mix.

The yummy Drumstick & Carrot Sambar is all ready to enjoy. It goes well with Idli, Dosa , Pongal & urad dal vada.
