Easy aloo paratha is a quick and easy preparation. In this the potatoes are boiled, mashed and mixed with all purpose flour along with other spices and cooked on a hot tawa. It is so soft and delicious which is perfect for lunches or even for breakfast. It is one of the kids favorite recipe.

Serves – 4
Ingredients:
Potatoes – 2, boiled and mashed
All purpose flour/Maida – 1/2 cup
Turmeric powder – 1/4 tsp
Chili powder – 1/2 tsp or as per your taste
Salt – as required
Asafoetida/hing – 1/4 tsp
Oil – 1 tsp
Coriander leaves/cilantro – few finely chopped
Oil – required for pan frying
Method:
1. Boil the potatoes and mash them well. In a bowl add in the mashed potatoes along with coriander leaves, turmeric powder, chili powder, asafoetida and salt. Now add the all purpose flour/maida and mix well. Add in a tsp of oil and mix well. (No need to rest this dough).
2. Divide the dough into small equal size balls. Dust little flour and with the help of a rolling pin roll each one into a small size paratha. The parathas should not be thin.
3. Heat tawa on a medium heat.Place the rolled paratha on a hot tawa and cook it on one side for 2 to 3 min. Flip it to the other side and apply little oil on top. Apply oil on both the sides and cook well till golden brown spots appear. Repeat the same for the rest.
