Curry Leaves Rice/Karuveppilai Sadam

Curry leaf/Karuveppilai/Karivepaku is one of the important ingredient in South Indian kitchen. Curry leaf rice/ Karuveppilai sadam is one of the simplest rice preparation. Curry leaf rice is delicious, aromatic and a healthy recipe which can be easily prepared in the busy mornings and it is perfect for lunches and trips.

Preparation time – 10 min
Cooking time – 10 min
Serves – 4

Ingredients:

Rice – 1 cup, Cooked
Curry leaves – 1 cup
Salt – as required
Oil – 2 tbsp
Mustard seeds – 1/2 tsp
Urad dal – 1/2 tsp
Cashew nuts – 8, cut into pieces
Tamarind – 1/4 tsp
Garlic – 4 or 5

Ingredients required for dry roasting:

Coriander seeds – 2 tbsp
Black peppercorns – 1 tsp
Dry red chilies – 3 or 4, as per your taste

Method:

1. Wash the curry leaves well and pat it dry. The curry leaves should be well dried before grinding it.

2. In a pan dry roast coriander seeds, black peppercorns and red chilies on a medium flame for 5 min or till nice aroma comes. Transfer to a plate and allow it to cool down.

3. Transfer the dry roasted ingredients to a mixie along with tamarind, garlic and curry leaves. Grind them to a slightly coarse powder.

4. Heat up 2 tbsp of oil in a pan. Now add in mustard seeds and when it splutters add in urad dal, cashew nuts and saute. Now add in the ground powder and saute for 3 min on a medium flame. Add in the cooked rice along with required salt and mix well.
