Katori chaat is one of the unique street food chaat recipe from India. This chaat is served in a deep fried bowl, called as Katori’s which is filled with potatoes, chick peas, onions, tomatoes and other spices. This delicacy can be a ideal starter for any kind of parties and it is favorite among kids and adults. These katori’s can be prepared well in advance and it can be used for parties and other occasions.

Ingredients:
Required for making Katori:
Maida/All purpose flour – 1 cup
Salt – as required
Hot oil – 1 tbsp
Water – required to make the dough
Oil – required for frying
Required for the filling:
Chick peas, boiled – 1/4 cup
Potatoes, boiled – 1/4 cup (sprinkle some chaat masala to the boiled potatoes, mix well and set aside)
Onions – 1/4 cup, finely chopped
Tomatoes – 1/4 cup, finely chopped
Sev – 1/2 cup or as required
Coriander leaves – required for garnish
Chaat masala – required as per taste
Green chutney – required as per taste
Tamarind chutney – required as per taste
Curd/yogurt – 3 – 4 tbsp, or as required (add in 1/2 tsp of sugar in the curd, mix well and set aside)
Preparation:
- First, in a mixing bowl add in the maida/all purpose flour, salt as required and mix well.
- Now add in hot oil and mix well till it crumbles.
- Add water little by little and make it into a soft dough.
- Now take a portion of the dough and slightly flatten it. Dust the flour and roll it slightly thin.
- Prick the rolled dough with a fork, so that it doesn’t puff up while frying.
- Now use a small size cookie cutter or any bottle cap and cut the flattened dough into small size circles. Now take a small size tumbler and grease it at the bottom. Take one circle and place it at the bottom of the greased tumbler and press gently as shown in the above video.
- Place the tumbler in the hot oil and gently splash the hot oil around the tumbler so that the dough separates from the tumbler. If the dough doesn’t separate, gently separate it using a fork.
- Fry the katori’s on a medium heat until it is golden in color. Drain off any excess oil on a paper towel and set aside. Repeat the same for the rest of the dough.
- Take one katori and add in 1 tsp of boiled chickpeas, 1 tsp of boiled and cubed potatoes, 1/2 tsp of green chutney, 1/2 tsp of tamarind chutney, 1/2 tsp of yogurt/curd.
- Add in a tbsp of onions and tomatoes. At last, add 2 tbsp of sev and garnish with coriander leaves/cilantro.
- Finally, sprinkle some chaat masala on top and serve the yummy katori’s immediately.
