Shahi Paneer is an all time favorite North Indian dish which goes extremely well with roti or naan. In this preparation the paneer is cooked in a rich tomato based sauce along with cream and other spices. The flavors from the cream and the cashew nuts makes this dish very delicious.
Preparation time – 10 min
Cooking time – 25 min
Serves – 4 to 6
Ingredients:
Paneer – 500 g cut into cubes
Red onion – 2 medium sized chopped
Tomatoes – 3 medium sized chopped
Ginger – 1/2 inch
Cashew nuts – 15 pieces
Chili powder – 3/4 tsp or as required
Turmeric powder – 1/4 tsp
Coriander powder – 1 tbsp
Milk – 1/2 cup
Cream – 1/2 cup
Kasoori methi – 1 tsp crushed
Garam masala powder – 1 tsp
Salt – as required
Cardamon powder – 1/2 tsp
Oil – 3 tsp
Butter – 2 tbsp
Method:
1. Heat 3 tsp of oil in a pan. Add in onions, cashew nuts, ginger and the tomatoes and saute well for 10 to 12 min. Let it cool down a little. Now grind it well along with turmeric powder, chili powder and coriander powder. Set aside the ground mixture.
2. Heat 2 tbsp of butter in a pan. Add in the ground mixture and saute well on medium flame for 15 min. Add in 1/2 cup of milk and 1/2 cup of cream and mix. Add in required salt, kasoori methi, garam masala powder and mix well. Allow it to come to a boil.
3. Now add in 1/2 tsp of cardamon powder and the cubes of paneer. Mix well and let it boil on a low flame for 5 min. Adjust the consistency and the salt according to your taste.
Enjoy this rich and delicious Shahi Paneer along with roti or naan.
