Chow Chow which is also called as Chayote is used to prepare many dishes like kootu, sambar and other curries. This kootu is a very simple recipe which can be prepared very easily in the busy mornings or for dinner. This is prepared using chow chow, moong dal and few other spices. It is a great one pot dish which goes very well with steamed rice or as a side dish for roti.

Serves – 4
Ingredients:
Chow chow/Chayote – 2 cups chopped into small pieces
Moong dal – 1/4 cup
Turmeric powder – 1/4 tsp
Sambar powder – 2 tsp or as required
Salt – as required
Mustard seeds – 1/4 tsp
Urad dal – 1/4 tsp
Dry red chilies – 2
Curry leaves – few
Oil – 2 tsp
Ingredients required for grinding:
Cumin seeds – 1/2 tsp
Coconut – 3 tbsp
Dry red chilies – 3 or as required
Method:
1. Wash the moong dal well. Peel the skin of the chow chow and cut it into half. Remove the soft seed inside and chop it into small pieces. Grind the cumin seeds, coconut and dry red chilies to a smooth mixture and set aside.
2.Combine pieces of chow chow and moong dal in the pressure pan. Add in the turmeric powder, salt and sambar powder. Add in 1 1/2 cups of water and mix well. Cover the pressure pan and let it whistle for 1 time.
3. Let the pressure go down completely. Remove the lid and add in the ground mixture along with required water and allow it to boil for 5 min on a medium flame. Adjust the salt and the consistency according to your taste. After 5 min of boiling switch off the stove and set aside.
4. In a small pan add in 2 tsp of oil and allow it to heat up. Add in mustard seeds and when it splutters add in urad dal, red chilies and curry leaves and saute for 30 seconds.
5. Transfer the tempering to the gravy and mix.
Delicious Chow Chow/Chayote kootu is all ready to enjoy.
