Ridge Gourd/Peerkangai Curry

Ridge Gourd which is also called as Peerkangai/Beerakaya or Turai is used to prepare many different recipes. Ridge gourd/peerkangai curry is a simple curry which is prepared using simple ingredients. It is a quick recipe and it tastes best when served with steamed rice or roti.

Preparation time – 10 min
Cooking time – 15 min
Serves – 4

Ingredients:

Ridge gourd/Peerkangai – 2, chopped
Red onion – 1 tbsp finely chopped
Salt – as required
Turmeric powder – 1/4 tsp
Sambar powder – 1 tbsp or as per your taste
(Sambar powder can be substituted with red chili powder and coriander powder)
Oil – 1 tsp

Tempering ingredients:

Oil – 1 tsp
Mustard seeds – 1/4 tsp
Urad dal – 1/4 tsp
Red onion – 2 tsp finely chopped
Curry leaves – few

Method:

1. Peel the skin of the ridge gourd and wash it well. Cut into small pieces and set aside.

2. In a pan combine the chopped ridge gourd, 1 tbsp of red onion, turmeric powder, salt and sambar powder. Mix well till all the spices are well combined with the ridge gourd.

3. Now cook it on a medium flame covered. Keep stirring in between and cook well till the ridge gourd becomes soft. Adjust the salt as per your taste and switch off the stove.

4. In a small pan add in a tsp of oil and allow it to heat up. Saute urad dal and the mustard seeds. Add 2 tsp of finely chopped onion and saute till onion turns golden. Add in the curry leaves. Transfer the tempering to the prepared ridge gourd curry and mix well.

Delicious Ridge gourd/Peerkangai curry is all ready.
