Avial is a traditional dish originated from South India and it is very common in Kerala. It is a delicious dish which is prepared using mixed vegetables, coconut and seasoned with coconut oil and curry leaves. It is a perfect accompaniment with steamed rice.

Serves – 4
Ingredients:
Carrots – 2 medium sized cut lengthwise
Drumstick – 1 cut lengthwise
Brinjals/eggplant – 2 medium sized cut lengthwise
Plantain/Raw banana – 1 medium sized cut lengthwise
Potato – 1 medium sized cut lengthwise
Grated coconut – 1 cup
Green chilies – 6 or as per your taste
Cumin seeds/Jeera – 1 tsp
Salt – as required
Turmeric powder – 1/4 tsp
Coconut oil – 1 tbsp
Yogurt/Curd – 4 tbsp
Curry leaves – few
Method:
1. Wash all the vegetables well and cut them lengthwise. Coarsely grind the coconut, green chilies and cumin seeds/jeera and set aside.
2. In a pan add in all the cut vegetables along with some water, turmeric powder and required salt. Cover the pan and let the vegetables get cooked. The vegetables should not become mushy.
3. Once the vegetables are well cooked add in the ground paste (coconut, cumin and green chilies) and mix well. Let it boil on a medium flame for 3 to 5 min.
4. Switch off the stove and add in yogurt/curd, curry leaves and mix well. Add in 1 tbsp of coconut oil and mix gently. Adjust the salt according to your taste.
Enjoy this delicious Avial with steamed rice.
