Spinach dal is a wonderful dish prepared using spinach and toor dal. It is a quick and easy dal which taste great with rice or roti. It can be prepared using moong dal too.

Serves – 4 to 6
Ingredients:
Spinach/palak – 2 cups washed and chopped finely
Toor dal – 1 cup
Onion – 1 medium sized chopped finely
Tomato – 1 medium sized chopped
Garlic cloves – 6 chopped finely
Green chilies – 4 or 5 sliced lengthwise
Turmeric powder – 1/4 tsp
Salt – as per your taste
Mustard seeds – 1/4 tsp
Jeera/cumin seeds – 1/4 tsp
Red chilies – 2
Asafoetida/hing – 1/8 tsp
Oil – 2 tbsp
Method:
1. Wash the toor dal couple of times and soak it in water for 30 min. Drain the water and add the toor dal to a pressure pan along with 2 cups of water and let it whistle for 2 times. Wait for the pressure to go down completely and set aside the boiled toor dal.


2. Wash the spinach well and chop it finely and set aside. In a pan add 2 tbsp of oil and allow it to heat up. Now add the mustard seeds and when it splutters add the cumin seeds, red chilies and the asafoetia and saute for 30 seconds.
Now add the onions, garlic and green chilies and saute till the onions turns nice and translucent. Add the chopped tomatoes add mix. Add in the turmeric powder and salt. Mix well and saute till the tomatoes becomes soft.



3. Add the chopped spinach/palak and mix. Cook for 2 minutes and add in the boiled toor dal. Add some water and allow it to boil for 5 to 10 min.
Adjust the salt and the consistency according to your taste and switch off the stove.



The delicious Spinach dal is all ready to enjoy with hot steamed rice or roti.
