Rava Dhokla is a quick and easy snack preparation. It is deliciously soft & fluffy and it is prepared using rava/semolina/sooji. It is usually served with green chutney or tomato chutney and it is a perfect tea time snack.

Serves – 4
Ingredients:
Rava/sooji/semolina – 1 cup
Curd – 1/2 cup
Water – 1 1/2 cup
Green chilies – 2
Ginger – 1/2 inch
Turmeric powder – 1/4 tsp
Salt – as per your taste
Eno salt / fruit salt – 5g (one sachet)
Oil – 2 tsp
Tempering ingredients:
Mustard seeds – 1/4 tsp
Urad dal – 1/2 tsp
Green chilies – 1 finely chopped
Curry leaves – few
Cilantro/coriander leaves – few finely chopped for garnish
Oil – 2 tsp
Method:
1. In a mixie grind the green chilies & ginger to a fine paste. In a bowl add in rava/semolina/sooji, curd, green chili & ginger paste, 2 tsp oil, turmeric powder and salt. Add in 1 1/2 cups of water and mix well. Let it rest for 15 to 20 min.
The consistency of the mixture should be like a idli batter.



2. Heat some water in a steamer. Grease a plate or a bowl with little oil. Now take 1 1/2 cups of the batter and add 5 g of eno salt and mix gently. Pour the batter in the greased plate or bowl and transfer the plate with the batter into the steamer immediately and sprinkle little bit of red chili powder on the top. Let it steam for 15 to 20 min or until it is well cooked.



3. Once it is well cooked allow it to cool down for a while. Loosen the corners of the plate with a knife. Flip the prepared dhokla in another plate and cut it into squares.
In a small pan add in 2 tsp of oil and allow it to heat up. Now add in the mustard seeds and allow it to splutter. Add in urad dal, finely chopped green chili and the curry leaves and saute just for 30 sec. Pour the tempering ingredients over the dhokla. Garnish with finely chopped cilantro/coriander leaves.


Enjoy nice and soft Rava Dhokla with green chutney or tomato chutney.
