Semiya (Vermicelli) Payasam is also called as Kheer is one of the easiest sweet dish prepared in most homes during festivals and other celebrations. It is prepared using roasted Semiya (Vermicelli) with milk and nuts. There are different varieties of payasam but Semiya (Vermicelli) payasam is the quick and easy one. It is one of the kids favorite sweet dish.
Cooking time – 20 min
Serves – 4 to 6
Ingredients:
Semiya (Vermicelli) – 1 cup
Sugar – 3/4 cup
Milk – 3 cups
Cashews, Almonds and Raisins – 1/2 cup
Cardamon Powder – 1/2 tsp
Ghee/Clarified butter – 1 tbsp
Method:
1. In a pan heat 1 tbsp of ghee/clarified butter. Now add in the cashews and almonds and roast till it is slightly golden in color. Now add in the raisins and saute just for 30 seconds. Add in roasted semiya (Vermicelli) and saute for a minute or two.



2. Add in 3 cups of milk and allow it to boil for 10 to 15 minutes. When the semiya (Vermicelli) is well cooked add in the sugar and the cardamon powder and mix well. Let it boil for 5 minutes and switch off the stove.
Adjust the consistency and the sweetness according to your taste.

Tips:
The Semiya (Vermicelli) should not be mushy.
If you are using raw semiya (Vermicelli) dry roast in a separate pan and use it to make the payasam.
If the payasam becomes thick add in some boiling milk.
