Beets and Green Peas rice is flavorful and tasty rice preparation.This rice is perfect for lunches too.
Preparation time – 20 min
Cooking time – 25 min
Serves – 4 to 5
Ingredients :
Beets – 4 medium sized
Green peas – 1/2 cup
Basmati Rice – 1 cup
Water – 2 cups
Onion – 1 small size chopped into small pieces
Ginger and Garlic Paste – 1/2 tbsp
Turmeric Powder – 1/4 tsp
Chili Powder – 1/2 tsp or as per your taste
Coriander Powder – 1 tsp
Salt – as per your taste
Coriander leaves – few strings finely chopped for garnish
Tempering:
Bay leaves – 1 small size
Cloves – 3
Cardamom – 3
Cinnamon stick – 1/4 inch
Oil – required for pan frying, 3 tbsp
Method :
1. Wash the Basmati rice couple of times and soak it in the water for half an hour (will be used later in step 4). Chop the beets into small pieces.
2. Add 3 tbsp oil in a Pressure pan and heat. Once the oil is hot add the tempering ingredients one by one and sauté for a minute. Now add the onions and sauté it till the onions gets nice and translucent. Now add the ginger and garlic paste and sauté it for a minute or till the raw smell has gone.



3. Now add the turmeric powder,chili powder,coriander powder and the salt and cook it for a minute. Now add the chopped beets and the green peas and sauté it for a minute till the beets are well coated with the masala.



4. Drain the water from the rice and add the rice to the beets mixture and mix well. Now add 2 cups of water and mix well. Cover the pressure pan and let it whistle for two times and switch off the stove.




5.Wait till the pressure goes down completely. Now open the pressure pan and wait till the rice cools down little bit. Add the finely chopped coriander leaves and mix well.

6. The yummy and colorful beets and green peas rice is all ready to serve !!! It goes well with plain curd or raita.
