Cucumber pachadi is a very simple dish prepared using cucumber, yogurt along with other spices. Pachadis can be prepared in many ways using different vegetables. It is a perfect combination with steamed rice or roti.

Serves – 4
Ingredients:
English cucumber – 1 chopped finely
Yogurt – 2 tbsp or as per your taste
Salt – as required
Turmeric powder – 1/4 tsp
Coriander leaves – few finely chopped
Ingredients required for roasting and grinding:
Coriander seeds – 4 tsp
Chana dal – 2 tsp
Mustard seeds – 1/2 tsp
Dry red chili – 2
Green chili – 2
Coconut – 3 tbsp
Tempering ingredients:
Mustard seeds – 1/4 tsp
Urad dal – 1/4 tsp
Curry leaves – few
Asafoetida – a pinch
Oil – 2 tsp (required for dry roasting & tempering)
Method:
1. Peel the skin of the cucumber and chop finely. Add the chopped cucumbers in a bowl and sprinkle little salt and mix well. Set aside for 10 min.

2. In a pan add in a tsp of oil. Saute coriander seeds, chana dal, mustard seeds, red chilies and green chilies on a medium flame for 5 min and switch off the stove. Allow it to cool down and grind it well. Now add in the coconut and grind it to smooth paste. Set aside.



3. Squeeze the soaked cucumber to remove any excess water. Add the squeezed cucumber in a bowl. Add in the ground paste along with required salt and turmeric powder and mix.


4. In a pan add in a tsp of oil. When the oil is hot add in mustard seeds and let it splutter. Now add in urad dal, curry leaves and asafoetida. Saute for a minute. Transfer the tempering ingredients to the cucumber mixture. Add in yogurt, coriander leaves and mix well.


Enjoy this Cucumber Pachadi along with steamed rice or roti.
