Tirunelveli Halwa/Wheat Flour Halwa

Tirunelveli halwa/Wheat flour halwa is a traditional and a popular sweet in Tirunelveli district. In this preparation the whole wheat flour is soaked for couple of hours and the milk is extracted from the flour which is used to prepare this delicious halwa. It is most loved and eaten by most of South Indians.

Preparation time – 20 min
Cooking time – 1 hour
Soaking time for the dough – 3 hours
Serves – 4 to 6

Ingredients:

Whole wheat flour – 1 cup
Sugar – 2 cups
Cashews – 15
Ghee/Clarified butter – 1/4 cup
Oil – 4 tbs
Orange food coloring – a pinch
Water – as required to make the dough
Water – 3 cups to soak the dough

Method:

1. Take whole wheat flour and mix well by adding water little by little. The dough should be stiff like a poori dough. Knead well. Now place the dough in a bowl and add 3 cups of water to it. Let the dough soak in the water for 3 hours.

2. After 3 hours of soaking, mix the dough well with your hands. The dough will get dissolved in the water and you will see white colored milk. Now strain the milk using a fine hole strainer or a muslin cloth. Strain it well and discard the pulp. Set aside the strained milk.

3. Heat 3 tsp of ghee/clarified butter in a wide heavy bottomed vessel. Saute the cashews till golden in color. Pour in the strained milk and mix well. Add in the food color and keep stirring constantly till it becomes like a porridge. Now add in the sugar and keep stirring constantly on a medium flame.

4. Add in a tsp of ghee and oil and keep mixing. The ghee and the oil will be absorbed by the halwa. Keep adding ghee and oil at regular intervals and keep mixing constantly on a medium flame.

5 Halwa becomes glossy and it starts to leave the sides of the pan. Add in some more ghee and oil and mix well. Keep stirring until the halwa becomes non sticky and it rotates in the pan. Add in some ghee and oil and mix well.

6. Switch off the stove when the halwa starts to rotate in the pan and the ghee oozes out. Remove the excess ghee when it starts to float on top.
