Pepper Rasam

It’s a traditional South Indian soup made using tamarind,tomatoes and other spices.

Preparation time – 10 min
Cooking time – 10 min
Serves – 4

Ingredients

Coriander seeds – 1 tsp
Cumin seeds – 1/2 tsp
Whole black pepper – 1 tsp
Turmeric powder – 1/4 tsp
Curry leaves – few
Garlic – 3 cloves
Tomato – 1 big or 2 medium size
Tamarind – a small goose berry size ball
Coriander leaves – 2 tbs finely chopped

For the seasoning

Oil or Ghee – 1 tsp
Mustard seeds – 1 tsp
Red chilli – 1
Cumin seeds – a pinch
Curry leaves – few
Asafoetida powder – little( a pinch)

Preparation

1. Soak tamarind in a cup of warm water, extract its juice and throw the pulp.
2. Grind coriander seeds,cumin seeds, pepper, curry leaves and garlic for a few seconds and add chopped tomatoes grind few seconds.

3. Take a cup of tamarind extract, turmeric powder,add the mixture ( coriander ,cumin,pepper,garlic and curry leaves) and add salt as per your taste. Boil it.
4. Once it starts boiling, keep the flame on low and let is simmer for 10-15 minutes.
5. Now add another 2 cups of cup of water, add coriander leaves and boil it on a medium flame until the rasam starts forming at the top.

     
6. Once it starts forming on the top switch off the stove.( If the rasam boils it will not taste good)
7. Heat a tsp of ghee or oil. Add mustard seeds, when it splutters, add a pinch of cumin seeds,add red chilli, curry leaves , asafoetida and pour it over the rasam.
