Bhendi fry / Okra fry

Bhendi fry (alternately called as Okra or ladyfinger) is a stir fry recipe.It is a very simple fry which can be served as a side dish with steamed rice or with chapati.

Preparation time – 20 min
Cooking time – 20 min
Serves – 4

Ingredients:

Bhendi (okra)  – 1 lb
Onion – 1/2 medium size onion chopped into small pieces
Green chilies – 3
Curry leaves – 4 or 5 leaves optional
Salt – as per your taste
Turmeric powder – 1/4 tsp
Oil – 3 tbsp required for pan frying

Tempering:

Mustard seeds – 1/4 tsp
Red chilies – 2
Urad dal – 1/4 tsp
Hing / asafoetida – 1/8 tsp

Method:

1. Wash and cut the bhendi/ okra into small pieces.

2. Heat 3 tbsp of oil in a pan. Once the oil is hot add in the mustard seeds. When the mustard seeds splutter add in the red chilies, Urad dal and the asafoetida and saute it for a minute.


3. Now add in the onions and the green chilies. Cook till the onions are nice and translucent. Add the turmeric powder and salt and saute for a minute.                          

4. Add the bhendi/okra and mix it well. Cover the pan and cook till the bhendi/okra is nice and tender.keep mixing in between so that it doesn’t stick to the bottom of the pan.

5. The yummy bhendi/okra fry is all ready to serve. It goes well with steamed rice or roti.
