Chakkara pongal which is also called as Sweet pongal is a popular dish from South India which is mainly prepared during the festival called as Pongal. It is a very simple and delicious recipe prepared using rice, moong dal, jaggery and nuts.
Preparation time – 10 min
Cooking time – 25 min
Serves – 5
Ingredients:
Raw rice/long grain white rice – 1 cup
Moong dal – 1/4 cup
Jaggery – 2 cups
Ghee/clarified butter – 4 tbsp or as required
Cashews – 10 chopped into small pieces
Raisins – 2 tbsp, optional
Cardamon powder – 2 tsp or as per taste
Water – 4 cups
Preparation:
1. Wash the rice and moong dal well and add it to the pressure cooker. Add in 4 cups of water, cover the pressure cooker and let it whistle for 4 times. Wait till the pressure goes down completely and remove the lid. Mash the rice and moong dal well.
2. In a pan add in a tsp of ghee/clarified butter and roast the cashews till they are golden in colour. Set aside the roasted cashews.
3. Bring the pot of cooked rice and dal mixture to a medium heat. Add in 2 cups of jaggery and mix well. Once the jaggery is well blended with rice and dal mixture keep adding ghee little by little and mix. Let everything cook well on a medium heat for 10 minutes. Keep stirring so that it doesn’t stick at the bottom of the pan.
4. At last, add in the cardamon powder, roasted cashews and mix well.
