Yellow Pumpkin Halwa

Yellow Pumpkin halwa is a simple and delicious sweet which is prepared using pumpkin and milk as the main ingredients. It can be prepared for any kind of festivals or special occasions. It is simple to prepare and it makes a good dessert after a meal.

Preparation time – 15 min
Cooking time – 25 min
Serves – 4

Ingredients:

Yellow pumpkin – 2 cups chopped
Milk – 1 cup
Ghee/Clarified butter – 2 to 3 tbsp approx
Sugar – 4 tbsp or as required
Cashews – 10 pieces chopped
Raisins – 10
Cardamon powder – 1/2 tsp
Saffron – few

Method:

1. Peel the skin of the pumpkin and chop it into small pieces. Wash it well and add it to the pressure pan along with a cup of milk. Let the pressure pan whistle two times. Let the pressure goes down completely. Remove the lid and mash the mixture well. Set aside.

2. Add 1 tbsp of ghee and add in cashews and raisins. Saute till golden in color. Remove them and set aside.

3. Add the pumpkin mixture to the same pan and stir well. Keep stirring continuously for 10 min. Add in the sugar and 1 tbsp of ghee and mix. Add in the saffron. Stir continuously till the mixtures reduces in quantity.  (Refer the video for the detailed process)

4. Now add the sauteed cashews and raisins to the pumpkin mixture and mix well. Add in the cardamon powder and mix.

5. When the mixture turns golden in color and leave the sides of the pan switch off the stove.
