Paal bun is a very rare sweet which is not found in many of the sweet shops. It is available in villages and small towns in Tamil Nadu. It is very popular in Southern Tamil Nadu. It is quite similar to donuts which are deep fried and dipped in the sugar syrup. It is nice and soft inside and crystallized sugar coating on outside make this sweet very tasty. Both kids and adults would cherish this delicious sweet.
Preparation time – 20 min
Soaking time – 3 to 4 hrs
Cooking time – 20 min
Makes – 15 to 20
Ingredients:
All purpose flour/Maida – 2 cups
Sugar – 1 cup
Yogurt/Curd – 1/2 cup
Baking soda – 1/2 tsp
Egg whites – whites of 2 eggs (optional)
Oil – 4 tbsp
Oil – required for deep frying
Ingredients for sugar syrup:
Sugar – 3 cups
Water – 3/4 cup
Method:
1. Combine yogurt and soda in a bowl well. Now add in the egg whites, 4 tbsp of oil, 1 cup of sugar and whisk it well.
2. Add in all purpose flour/maida and mix well until everything is well incorporated and it forms a soft dough. Cover it and set aside for 3 hours.
3. In a medium saucepan add in the sugar and water for the sugar syrup. Boil well on a medium flame for 5 to 10 min until a string consistency is formed. Set aside the sugar syrup. ( You can check the consistency by touching the sugar between your thumb and the index finger if it forms a string like texture then it is the right consistency).
4. After 3 hours of soaking, knead the dough once and divide it into small equal portions. Take each ball and flatten it a little.
5. Heat oil for deep frying. Gently drop each one into the hot oil and fry well till both the sides are golden in color. Drain them on a paper towel to remove any excess oil.
6. Add the fried buns to the prepared sugar syrup and dip it well for 10 to 15 seconds. Take it out from the sugar syrup and keep it aside so that the sugar crystallizes on top of the buns.
