Raw Mango Rice

Mango rice which is also called as Mamidikaya Pulihora is a classic preparation from Andhra Pradesh. It is made from freshly grated green mangoes along with other spices which gives this rice a nice and tangy flavor. It is quick and easy to prepare and great for lunches too.

Preparation time – 10 min
Cooking time – 10 min
Serves – 4

Ingredients:

Cooked rice – 1 cup
Grated green mango – 1 cup
Green chilies – 2, slit
Curry leaves – few
Cashews – 2 tsp finely chopped
Mustard seeds – 1/4 tsp
Urad dal – 1/2 tsp
Chana dal – 1/2 tsp
Asafoetida/hing – 1/8 tsp
Grated coconut – 3 tsp
Turmeric powder – 1/4 tsp
Salt – as per your taste
Oil – 4 tsp

Method:

1. Heat oil in a large pan. Add in mustard seeds and let it splutter. Now add in urad dal, chana dal, cashews and saute for 30 sec. Add in green chilies, curry leaves and asafoetida and saute for 30 sec.

2. Add in the grated green mango and mix. Add turmeric powder and saute till the mango shrinks a little.

3. Add in salt and mix well. Now add the cooked rice and mix well. Finally add the grated coconut and mix well.

Flavorful Raw Mango rice/Mamidikaya Pulihora is all ready to enjoy. Serve it with papad.
