Potato pulusu/curry is a quick and easy preparation. In this recipe the potatoes are cooked in tamarind sauce along with other spices. It is spicy and tangy but delicious at the same time. Pulusu can be prepared using other vegetables like cauliflower, bottle guard,okra etc. It goes very well with steamed rice.

Serves – 4
Ingredients:
Potatoes – 4 medium sized cubed
Onion – 1 medium sized chopped finely
Tomatoes – 2 small sized chopped finely
Tamarind – one gooseberry size
Turmeric powder – 1/4 tsp
Chili powder – 1 tsp or as per your taste
Salt – as per your taste
Coriander/ dhaniya powder – 3/4 tsp
Oil – 2 tbsp
Coconut – 2 tbsp
Tempering ingredients:
Mustard seeds – 1/4 tsp
Red chilies – 2
Curry leaves – few
Hing/asafoetida – 1/8 tsp
Oil – 1 tsp
Method:
1. In a pan heat up 2 tbsp of oil. Now add the onions and saute till it is nice and soft. Add in the cubed potatoes and tomatoes and saute well on a medium flame for 5 min. Add the turmeric powder and salt and mix. Add some water and allow the potatoes to cook well.
Soak the tamarind in warm water for some time and extract the juice. Set it aside.



2. Once the potatoes are well cooked add the chili powder & dhaniya/coriander powder. Add in the tamarind juice and allow it to boil well for 10 min.
In a mixie grind 2 tbsp of coconut and add it to the gravy and mix. Let it boil for another 2 to 3 min and switch off the stove. Adjust the salt and the consistency.




3. In a small skillet add in a tsp of oil. When the oil is hot add in the mustard seeds and allow it to splutter. Now add the red chilies, curry leaves and hing/asafoetida and saute for 30 sec. Add the tempered ingredients to the gravy and mix .
