Papad Ki Subzi

Papad Ki Subzi is a traditional recipe from the cuisine of Rajasthan. It is a quick and delicious recipe which is prepared mainly by roasting the papads and adding it to the yogurt gravy along with other spices. This Rajasthani delicacy is usually served with roti but it can also be served along with jeera rice, steamed rice or with pulav.

Preparation time – 10 min
Cooking time – 15 min
Serves – 4

Ingredients:

Papad – 4 medium sized
Onion – 1 medium sized chopped finely
Cumin seeds/Jeera – 1/2 tsp
Salt – as required
Turmeric powder – 1/8 tsp
Chili powder – 1/2 tsp or as per taste
Coriander powder – 1/2 tsp
Dry red chilies – 2
Green chilies – 2 chopped finely
Ginger & Garlic paste – 3/4 tsp
Yogurt/curd – 1 cup
Kasoori Methi/Dried fenugreek leaves – 1 tsp
Coriander leaves/cilantro – few finely chopped
Oil – 3 tsp

Method:

1. Roast the papads and break them into medium size pieces and set aside. Whisk the curd/yogurt well and set aside.

2. Heat oil in a pan. Add in cumin seeds and saute for 20 sec. Now add in the finely chopped onions and saute till translucent. Add in the dry red chilies and green chilies and mix.

3. Add in turmeric powder, chili powder, coriander powder, ginger & garlic paste and saute till the raw smell disappears.

4. Now add the yogurt/curd along with very little water and mix. Add required salt and mix. Stir continuously by keeping the flame on medium to avoid the curd to curdle.

5. When the gravy comes to a boil add the roasted papdas and mix. Simmer for another 2 minutes. Add in the kasoori methi and the chopped coriander leaves/cilantro and mix well.

Serve this flavorful Papad ki Subzi with roti.
