Vegetable Cutlet

Vegetable Cutlet is a delicious and crispy snack prepared by combining mashed potatoes, vegetables and few other spices. This delicious vegetable cutlet can be served as a perfect evening snack or as an appetizer along with green chutney or ketchup. These cutlets can also be used as a patties for making vegetable burgers or it can be served along with vegetable biriyani and raita.

Preparation time – 20 min
Cooking time – 25 min
Makes – 15 to 20 approx

Ingredients:

Potatoes – 3 medium sized, boiled and mashed
Cabbage – 1 cup finely shredded
Carrots – 1 cup finely shredded
Onion – 1 medium sized finely chopped
Green chilies – 2, finely chopped
Cumin seeds/jeera – 1 tsp
Salt – as required
Turmeric powder – 1/4 tsp
Chili powder – 1/2 tsp
Garam masala powder – 1/2 tsp
Cilantro/Coriander leaves – few finely chopped
Ginger & garlic paste – 1 tsp
Lime juice – 2 tsp
Bread crumbs – 1 cup
Egg – 1
Oil – 3 tsp
Oil – required for deep frying

Method:

1. Heat 3 tsp of oil in a pan. Saute cumin seeds and add in onions and green chilies. Saute the onions for 5 min.

2. Add in cabbage, carrots and saute for 5 min. Now add in the ginger and garlic paste and saute till the raw smell goes away.

3.Now add in turmeric powder, salt and chili powder and saute well. Add in the potatoes which are boiled and mashed and mix well. Cook it on a medium flame for 5 min.

4. Add in the lime juice, garam masala powder and cilantro and mix well. Cook it for another 3 min and switch off the stove.  Allow the mixture to cool down a little.

5. Divide the prepared vegetable mixture into small portions. Take each portion and slightly flatten it and then dip it in the egg wash. Now spread both the sides in the bread crumbs and set it aside. Repeat the same process for the rest of the vegetable mixture. (Check the video for the detailed process).

6. Heat oil for deep frying. Gently drop each cutlet in the hot oil and fry it well on both the sides till it is golden in color.

7. Set aside the fried cutlets on a paper towel to remove any excess oil.

Serve this crispy & crunchy Vegetable cutlets with tomato ketchup.
