Udaitha Muttai Kuzhambu/Eggs Poached in curry

Udaitha Muttai kuzhambu/Eggs poached in curry is one of the delicious curry prepared using eggs. The eggs are directly cooked in the flavorful curry along with other spices. The eggs are not boiled in this preparation but boiled eggs can also be used to prepare this same type of curry. It goes well with steamed rice, roti, idli or dosa.

Preparation time – 20 min
Cooking time – 20 min
Serves – 6

Ingredients:

Eggs – 6
Tamarind juice – 2 tsp
Onions – 1 medium sized finely chopped
Tomato – 1 small sized finely chopped
Garlic – 4 cloves cut into small pieces
Salt – as required
Turmeric powder – 1/4 tsp
Garam masala powder – 1/2 tsp
Sesame oil – 4 tsp

Ingredients required for roasting and grinding:

Coriander seeds – 2 tbsp
Cumin seeds/Jeera – 3/4 tsp
Dry red chilies – 8 or as per your taste
Onion – 2 tsp finely chopped
Coconut – 4 tbsp
Oil – 1/2 tsp

Tempering Ingredients:

Oil – 2 tsp
Mustard seeds – 1/2 tsp
Red chilies – 2
Curry leaves – few

Method:

1. In a pan add in coriander seeds, cumin seeds and a 1/2 tsp of oil and roast it on a medium flame till nice aroma comes. Add in red chilies and roast them. Now add in onion and saute well for 5 min on a medium flame. Add in the coconut and mix well. Switch off the stove. Allow it to cool down and then put it in a mixie and grind it to a smooth paste and set aside.

2. Soak the tamarind in some water and extract the juice and set aside.

3. Heat sesame oil in a pan. Saute onions till translucent. Add in garlic and saute. Now add in tomatoes and cook well. Add in turmeric powder and mix.

4. Add the juice of tamarind and mix. When it comes to a boil add in the ground mixture along with some water. Add in salt and garam masala powder and mix well. Allow it to boil.

5. When the gravy comes to a nice boil, gently crack the eggs into the gravy and leave it undisturbed. Cover it and let it cook on a medium flame for 5 min till the eggs get firm and the oil separates.

6. Gently flip the eggs to the other side and cook it covered for another 2 to 3 minutes.

7. In a pan heat up 2 tsp of oil. Add in mustard seeds and when it splutters add in red chilies and curry leaves. Saute for a minute and transfer the tempering to the prepared egg curry and mix.
