Mango Shrikhand

Mango Shrikhand/Amarkhand is a popular dessert from the cuisine of Maharashtra and Gujarat. It is a very simple dessert which is prepared using strained yogurt and mango pulp. It is typically served as a dessert after a meal or served with poori or roti.

Preparation time – 6 hours
Cooking time – 5 min
Serves – 4

Ingredients:

Mango pulp – 1 cup
Fresh yogurt(strained) – 2 cups
Sugar – 3/4 cup or as per your taste
Cardamon powder – 1/4 tsp

Method:

1. Place a strainer/sieve in a large bowl. Place a cheese cloth/muslin cloth in the strainer. Pour 2 cups of yogurt in the cheese cloth. Get the cloth together and tie tightly. Place the yogurt in the refrigerator for at least 6 hours or overnight. Make sure to refrigerate the hung yogurt or else it will become sour.

2. In a blender add in pieces of mango and puree it. Now add in the thick yogurt, sugar and the cardamon powder and whisk it nicely.

Tips:

1. The water from the yogurt has to drained completely before making the shrikhand.

2.Adjust the sugar depending on the sweetness of the mango.
