Rasgulla

Rasgulla is a popular Indian dessert which is prepared from ball shaped dumplings of paneer which is cooked in a light sugar syrup. The rasgullas are very famous in Odisha and West Bengal. It is soft and juicy and one of the kids favorite dessert.

Preparation time – 10 min
Cooking time – 45 min
Serves – 6

Ingredients required for making Paneer:

Whole Milk – 1 litre
Lime – juice of 1 lime

Ingredients required for making sugar syrup:

Sugar – 1 1/2 cups
Water – 5 cups

Method:

For making the Paneer:

1. Heat up 1 litre of milk. When it comes to a nice boil add in the juice of 1 lime and mix well. When the milk curdles completely strain it on a cheese cloth. Rinse the paneer well in cold water. Squeeze out the excess water and hang it for 30 min or till all the water drains off completely.

2. Now knead the paneer well for 10 min till it nice and soft. Make small balls out of it and set aside.

Making the sugar syrup:

1. Add 1 1/2 cups of sugar in a pan. Add 5 cups of water and mix well. Let it boil on a medium flame for 10 to 15 min.

2. Gently drop the prepared paneer balls into the boiling sugar syrup. Cover and let it boil for 15 min. The paneer balls will double its size. Switch off the stove after 15 min.

3. Let it cool down completely and refrigerate. Garnish with few strands of saffron and serve chill.
