Mixed Vegetable Kurma

Mixed vegetable kurma is a simple and delicious recipe. It is a dish consisting of vegetables which is cooked in a yogurt gravy along other spices. It is mild in flavor and a great combination for roti, poori or parotta.

Cooking time – 25 min
Serves – 4 to 6

Ingredients:

Mixed vegetables (carrots,beans,green peas,potatoes) – 1 cup chopped into small pieces
Onion – 1 medium sized chopped finely
Tomatoes – 2 small sized chopped finely
Curry leaves – few finely chopped
Coriander leaves/cilantro – few finely chopped
Mint leaves – few finely chopped
Ginger & garlic paste – 1 tsp
Green chilies – 2 sliced
Turmeric powder – 1/4 tsp
Chili powder – 1/2 tsp or as per your taste
Coriander powder – 1/2 tsp
Garam masala powder – 1/2 tsp
Salt – as per your taste
Coconut – 1/2 cup
Cashews – 8 pieces
Curd – 2 tbsp
Oil – 2 tbsp

Method:

1. In a pan add in 2 tbsp of oil. When the oil is hot add in onions, curry leaves and the green chili and saute well till the onions are nice and soft. Add in the ginger & garlic paste and cook till the raw smell goes away. Now add in the tomatoes and cook well.

Grind the coconut and cashews to a smooth paste and add it to the onion and tomato mixture and cook well. Add turmeric powder and salt. Add some water and allow it to boil for 5 min.

2. When the gravy is nicely boiling add chili powder, garam masala powder and the coriander powder and mix. Add in the yogurt and stir well. Now add vegetables and the required water. Allow the vegetables to cook on a medium heat stirring frequently.

3. When the vegetables are well cooked add the finely chopped coriander and mint leaves and mix. Cook it for another 5 min and turn off the stove.

 

The delicious Mixed Vegetable Kurma is all ready to enjoy with Poori, Roti or Parotta.
