Kale fry

Kale is one of the healthiest green leafy vegetables. We usually make spinach as a side dish in South India. This is a kind of spinach. Kale is a  healthy food and a rich source of many vitamins and nutrients. Let’s learn how to make this delicious dish.

Preparation time – 10 minutes
Cooking time – 15 minutes
Serves – 4

Ingredients

Kale – one big bunch
Onion – 1 medium size chopped into small pieces
Green chillies – 3 cut into pieces
Mustard seeds – 1/2 tsp
Urad dal – 1 tsp
Grated coconut – 2 tbsp
Oil – 2 tbsp

Method

1.  First wash the kale nicely, remove the kale stem off and chop into small pieces. Keep aside. Chop up the leaves into small pieces. Keep aside. Chop the onions and green chillies into small pieces.

  

2. Heat oil in a pan on medium heat. Add mustard seeds, after spluttering add urad dal. When urad dal gets roasted add chopped onions and green chillies. Fry the onions until it gets transparent.

3. Then add the chopped kale stems. Fry until it gets soft. After add chopped kale leaves and stir. Add salt according to your taste. Fry  until it cooked and dry. At last add grated coconut and mix it.
