Puran Poli / Bobbatlu

Puran Poli / Bobbatlu is a traditional sweet of Andhra Pradesh which is prepared during most of the festivals. It is a flat bread which is stuffed with a sweet mixture made from Moong dal and sugar. This can be made with Chana dal also.

Preparation time – 20 min
Cooking time – 30 min
Soaking time – 2-3 hrs
Makes – 12 – 15

Ingredients:

Maida/All purpose flour – 1 cup
Baking soda – a pinch
Salt – a pinch
Clarified butter/Ghee – 2 tsp
Clarified butter/Ghee – Required for pan frying
Moong dal – 1 cup
Sugar – 1 1/2 cup
Cardamon powder – 1/2 tsp
Water – required for mixing the dough

Method:

1.In a bowl add in the maida/all purpose flour,baking soda,salt and the 2 tsp of ghee. Mix well until the maida becomes like crumbs. Add in the water little by little to make it like a soft dough. Now add 2 tbsp of oil on the dough  and rest it for 3 hours covered.

2. Soak the moong dal for 15 minutes. Drain the water from the moong dal and add it to the pressure pan with 1 1/2 cups of water. Cover the lid and let it whistle for 1 time. Remove the lid of the pressure pan and mash the dal nicely. The moong dal has to be nice and soft. Add in 1 1/2 cups of sugar to the mashed dal and mix well.

3. Cook the dal and the sugar mixture on a medium flame for 20 min. Add in 1/2 tsp of cardamon powder. Cook it till the dal and the sugar mixture leaves the sides of the pan nicely.

4. Once it is well cooked transfer the mixture to a separate bowl and allow it to cool down.

5. Divide the dough into small lemon sized balls. Divide the sweet mixture into small balls. The sweet mixture has to be twice the size of the dough ball as shown in the picture. Take a plastic sheet and grease it with little ghee. Place the dough ball and flatten it into a small circle. Now place the sweet mixture in the center and get the edges from all the sides to cover it completely.

 

6. Grease your fingers with little ghee and gently flatten the ball carefully with your fingers to make it into a flat circle. Heat a pan on a medium heat. Now place the flattened puran poli/bobbatlu on a pan and cook it well on both the sides till it is golden in color by adding some ghee.

7. The yummy and delicious Puran poli/Bobbatlu is all ready to enjoy!!!
