Mint & Bell Pepper Rice

Mint and Bell Pepper rice is a simple and  flavorful rice preparation. This rice is perfect for busy people and bachelors. This is great for any kind of parties. This rice can be served with plain yogurt or any kind of raita.

Preparation time – 15 min
Cooking time – 30 min
Serves – 4 to 6

Ingredients:

Basmati rice – 1 cup
Mint leaves – 1/2 cup
Coriander leaves – 1/2 cup
Curry leaves – few
Green Chilies – 5 or as per your taste
Whole black pepper – 1/4 tsp
Onion – 1 medium sized sliced lenghtwise
Bell pepper/Capsicum – 2 medium sized sliced lenghtwise
Ginger – 1/2 inch
Garlic – 5
Turmeric Powder – 1/4 tsp
Garam Masala Powder – 3/4 tsp
Salt – as per your taste
Yogurt – 2 tbsp
Water – 2 cups to cook the rice
Oil – 2 tbsp

Method:

1.Wash the mint leaves and the coriander leaves nicely. In a mixie/blender add in the washed mint leaves, coriander leaves, curry leaves, ginger, garlic, green chilies, whole black pepper and grind it to a fine paste. Saute the sliced bell peppers/capsicum and set aside(Bell pepper of any color can be used). Wash the basmati rice well and soak it for 30 minutes.

2. In a pressure pan, add 2 tbsp of oil and allow it to heat up. Add in the sliced onions and saute till it is nice and translucent. When the onions are nicely cooked add in the ground paste and mix well. Add in the salt and the turmeric powder and cook well.

 

3. Cook well till the entire mixture becomes dry. Add in 2 tbsp of yogurt and cook it on a medium flame for 2 to 3 minutes. Add in the garam masala powder and mix well.

 

4. Drain the water from the soaked basmati rice and add it to the mixture and mix well. Add in 2 cups of water and when the water comes to a little boil cover the pressure pan and let it whistle for 2 times and switch off the stove.

5. Wait till the pressure goes down completely. Remove the lid and wait till the rice cools down a little bit. Now add the sauteed bell peppers/capsicum to the cooked rice and mix gently.

6. The Yummy and aromatic Mint & Bell pepper rice is all ready to enjoy. Enjoy this rice with plain yogurt or raita.
