Rava kesari is a quick and easy sweet preparation which is often made in most Indian homes. This is also called as Sooji Halwa in North India. This is usually made during festivals. Rava Kesari is delicious and easy to make,if you have any unexpected guests.
Preparation time – 10 minutes
Cooking time – 20 minutes
Serves – 6
Ingredients:
Rava or sooji or semolina – 1 cup
Sugar – 1 1/2 cups
Ghee – 1/2 cup
Water – 3 cups
Cashews – 10
Raisins – 10
Cardamom powder – 1/4 tsp
Orange colour – a pinch
Method
1. Heat a little ghee in a pan. Fry the cashew nuts and raisins and keep it aside.
2. In medium heat roast the rava (semolina) for a few minutes using a tbsp of ghee until the nice aroma comes.
3. Add the remaining ghee and fry for a minute. Meanwhile boil 3 cups of water by adding a pinch of orange colour. Now add the boiling water into the rava and keep the flame on a medium heat and keep stirring. Make sure that no lumps are formed.
4. After all the water evaporates, add sugar, stir well to avoid forming the lumps and cook on low flame until the kesari starts to leave the sides of the pan.
5. Add cardamom powder, cashew nuts, raisins and serve.
6. Grease a plate with ghee and spread the kesari and after cooling down, cut pieces like diamonds or squares. Kids would love this shapes.
