Dry kidney beans (Rajma) and Bell pepper rice is a tasty and flavorful rice dish. It is simple to make and great for lunches.

Serves – 4 to 6
Ingredients:
Dry Kidney beans (Rajma) – 1/2 cup
Rice – 1 cup
Water – 2 cups (to cook the rice)
Onion – 1 medium sized chopped finely
Green chilies – 2
Ginger and garlic paste – 1 tsp
Green bell pepper – 1 medium sized pepper cut lengthwise
Bay leaf – 2
Cinamon stick – 1 inch
Green cardamom – 2
Cloves – 3
Turmeric powder – 1/4 tsp
Chili powder – 1/4 tsp or as per your taste
Salt – as per your taste
Garam masala powder – 1/2 tbsp
Cilantro – few leaves finely chopped
Mint leaves – few leaves finely chopped
Yogurt – 2 tbsp
Oil – 3 tbsp
Method:
1. Wash and soak the kidney beans/rajma for 8 hrs. Drain the water from the kidney beans/rajma. Add the kidney beans/rajma along with 2 cups of water in the pressure pan and cook for 3 to 4 whistles.
2. Wash and soak the rice for 15 min. Now drain the water and add 2 cups of water to the rice and cook till the rice is well done. Set the rice aside till it cools down.

3. In a pan heat 3 tbsp of oil. When the oil is hot, add bay leaf, cinnamon stick, green cardamom, cloves and saute for one minute. Now add the finely chopped onions and green chilies and cook till the onions are nice and soft.


4. Now add the ginger and garlic paste and cook for few minutes till the raw smell has gone. Add the turmeric powder, salt, chili powder and the garam masala powder and cook well on a medium flame.


5. Add the bell pepper and saute for a minute. Add finely chopped cilantro and mint leaves, mix well.


6. Add the boiled kidney beans/rajma and 2 tbsp of yogurt and mix well with the masala. Cook on a medium flame for a minute.


7. Now add the cooked rice to the mixture and mix well.


8. The flavorful kidney beans/rajma and bell pepper rice is all ready to enjoy !! Enjoy this rice with just plain yogurt or any kind of raita.
