Egg fried rice is a Chinese world famous cuisine and a quick meal to make.

Serves – 2 to 3
Ingredients
Rice – 2 cups
Eggs – 2
One carrot sliced lengthwise
1/2 small onion sliced lengthwise
1/2 Green capsicum sliced lengthwise
Garlic – 3 cloves cut into small pieces.
Oil – 4 tbsp
For egg scramble
Oil – 2 tsp
Eggs – 2
Salt to taste
Pepper powder to taste
Method
1. Finely & lengthwise chop garlic, onions, carrot and capsicum.
2. Cook the rice and let it cool. The grains should be separate. You can use basmati rice or long grain rice. Leftover rice can also be used for this recipe.
3. Heat 2 tsp of oil in a pan, pour beaten egg into the pan, add a little salt and pepper powder. When egg has set a little, stir and scramble it. Keep it aside.
4. Heat oil, add garlic and fry for a few minutes.Then add finely chopped onions and fry until translucent. Now add the finely chopped capsicum and carrot and stir on high flame.The whole process has to be done on high flame stirring continuously. The vegetables should not over cooked. The vegetables should stay crunchy.Add the egg scramble and toss well.
5. Now add cooked rice, salt, pepper powder, soya sauce and toss to combine until well coated.
6. Garnish with spring onion greens. Serve with tomato sauce or any Indo Chinese dish like Gobi Manchurian or Chicken Manchurian.
This egg fried rice is very simple and easy to make with very less ingredients and can be prepared very quickly. This is one of the kids favorite food. For those who do not eat eggs you can make this using vegetables instead.
