Medhu Vadai

Medhu Vadai is a delicious crunchy Indian breakfast in the shape of doughnuts.

Preparation time – 2 hrs of soaking time

Cooking time – 20 min
Serves – 5 to 6 ( makes 15 vadas)

Ingredients:
Urad dal whole – 1 cup
Green chilies – 2
Ginger – 1 inch piece
Curry leaves – 4 to 5 leaves (finely chopped)
Pepper powder – 1/2 tsp
Salt – as per your taste
Water – as needed for grinding

Method :
1. Soak the Urad dal for atleast 2 hours.


2. Grind the Urad dal by adding some water till the dal is nice and fluffy( Add the green chilies and the ginger while grinding).The whole grinding process will take at least 12-15 min.

     
3. Now chop the onions and the curry leaves finely and add it to the batter.Add the salt and pepper and mix well.
4.Heat oil in a pan( be generous with the oil otherwise the vadas will stick to the bottom and it will be burnt).
5. Now wet your right hand and take a small amount of the batter and tap it with your fingers.Make a small hole in the middle using your thumb.

6.Drop the vadas into the hot oil and fry it both sides until it is crispy and golden-brown colour.

    
7. The yummy Medhu Vadas are all ready to enjoy !! It goes well with chutney or sambar.
