Boondi Ladoo is an all time favorite sweet in India. It is a traditional sweet which is prepared during festivals like Diwali and other special occasions.

Yields- 12
Ingredients:
Gram flour/Besan – 1 cup
Baking soda- a pinch
Cashews – 1 tbsp, cut into small pieces
Raisins – 1 tbsp
Cardamom powder – 1 tsp
Cloves – 3, powdered
Oil – required for frying
Ghee/ clarified butter – 1 tsp
Ingredients for sugar syrup:
Sugar – 1 and 1/2 cups
Water – 3/4 cup
Orange food color – 1/8 tsp (optional)
Making sugar syrup:
Take a pan, combine water and sugar, mix well first. Add in orange food color and bring it to boil.
Boil sugar syrup till you get a one string consistency, turn off the stove and set aside the syrup.
Making Boondi:
1. Add a teaspoon of ghee in a pan & add cashews. Fry till slightly brown and then add in raisins and saute.
2. Powder cloves and cardamon and keep aside.
3. Mix gram flour/besan with soda in a bowl. Add water little by little and mix well. The batter should be flowing consistency.
4. Heat oil and gently pour a little batter on the Boondi ladle and gently tap it.
Tiny droplets of batter will fall into the hot oil. Fry till golden brown & keep aside. Make sure to remove it from oil before it gets crisp. Repeat the same for the rest of the batter. Drain the fried boondi on a paper towel to remove any excess oil.
5. Add the fried boondi to the prepared warm sugar syrup.
6. Add fried cashews, raisins, cardamom powder and cloves powder. Mix it well.
7. Mix well until the boondi adsorbs the sugar syrup. Now make small balls out of it.

Tips:
How to find one string consistency?
When you touch it between your index finger and thumb and pull it apart, it should form a string otherwise just lift the ladle from the sugar syrup and wait for a few seconds – it will form a string.

Wipe off the Boondi Ladle with a cloth for each batch.
Alternatively you can wash the Boondi ladle and wipe it clean and then start the next batch.
