Potato Masala

 

A Quick and easy potato Masala for the busy professional. Goes well with Puri or Roti.

Serves – 4

Ingredients :

Potatoes – 3
Onions – 3 medium sized
Green chilies – 3
Curry leaves – 5 (finely chopped)
Ginger – 1/4 tsp (finely chopped)
Salt – as per your taste
Turmeric powder – 1/4 tsp
Gram flour or bean – 1/2 tsp
Coriander leaves / cilantro – few strings finely chopped for garnishing
Oil – for pan frying

Tempering :

Mustard seeds 1/4 tsp
Urad dal 1/4 tsp
Chana dal 1/4 tsp
Fennel seeds 1/4 tsp
Jeera 1/4 tsp
Hing or asafotedia – a pinch
Red chilies – 2

Method :

1. Boil the potatoes till it is nicely cooked and peel the skin of the potatoes.Cut the potatoes into small pieces.

2. Cut the onions into thin strips. Chop the green chilies into small pieces.

3.Heat oil in a pan. Once the oil is hot add the mustard seeds and allow it to splutter.Now add the Chana dal and the Urad dal and saute it till it is golden in colour.Now add the jeera,fennel seeds,red chilies,hing and saute it for a minute.


4.Now add the onions,green chilies,chopped ginger and the curry leaves.

5. Saute the onions till it is nice and soft. Add the salt and turmeric powder and cook for a minute.

6. Add the potatoes which are cut into small pieces and saute for a minute.Add some water and allow it to boil.

   

7. Once the curry comes to a nice boil , mix the besan/gram flour into little water till the besan/gram flour is nicely dissolved without any lumps.Add the mixed besan/gram flour into the curry and mix well.

   

8. Add the finely chopped coriander leaves and mix well.
9.The potato masala is all ready to enjoy.It goes well with poori or chapatis.
